Weekly Share Spotlight 6/23/2107


Happy summer solstice! This week brings the first cucumbers of summer! Along with them will be salad mix, red cabbage, tomatoes, basil, fennel, kale, mint, and beets. It may also be time to pull the last of the kohlrabi as it doesn't like this heat, and there is plenty more in the forecast. Since it is supposed to be over 100 degrees this weekend, I am including one of my favorite salads for a hot day. Something about it just cools you off and it takes almost no time to make!

 

Beet Salad

2 large beets

1 small or 1/2 large apple

2 sprigs fresh mint

1/4 tsp salt

1/4 tsp sugar

2 1/2 tablespoons balsamic vinegar

2 1/2 tablespoons olive oil

Grate the beets and apple. Finely chop one sprig of mint and add to the beet and apple mixture. Mix with oil and vinegar, add salt and sugar, and garnish with remaining mint.
