Weekly Share Spotlight 5/1/2018

It’s our second week, so for our half-share members we welcome the second wave for their first share! Full-share members, we hope you enjoyed last week’s share because there are repeats as well as a few new things this week. There will be another handful of cherry tomatoes and strawberries. In addition there will be: basil, butter head lettuce, kale, salad mix, broccoli, some garlic scapes, fava beans, sugar snap peas, and radish. My mom shared a great kale salad recipe with me this week that is super simple and yummy, so I’m going to share it with you.

 

Fiesta Kale

1 bunch kale - stems removed, chopped

1 can black beans, drained

1 avocado

½ cup cilantro, chopped

A couple handfuls crushed tortilla chips

Prepare dressing:

3 Tbs olive oil

3 Tbs lime juice

1 tsp honey

1-2 jalepenos, minced

½ tsp cumin

¼ tsp corriander

⅛ tsp salt

Massage dressing into kale (this helps break down the fibers a bit and makes is easier to chew).

Add beans, cilantro, and avocado and toss.

Top with chips before serving. I doubled this for our family and had leftovers. You could add sliced radish or the snap peas for a little crunch too.

 

Last week we had a cool, rainy day for pick-up. We will see what this week brings. See you Friday at the farm!
